Mashed Garlic Cauliflower

 Mashed Cauliflower (Healthier and just as tasty as mashed potatoes)

1 head of Cauliflower, cut into florets
4 cloves garlic, peeled and minced
1 tbsp Olive Oil
2-3 tsp Salt (I use my garlic sea salt grinder, or just plain kosher salt)
1 tsp Ground Pepper
1 tbsp Cream Cheese
1/2 cup plain greek yogurt
1/4 cup milk
1/3 cup grated Parmesan Cheese 

Preheat your oven to 375
After chopping the cauliflower, steam it.  Either simply in the microwave, or on the stove, or in a steamer.
In a small pan, heat olive oil and sauté the garlic until you can smell it (approximately 3-4 minutes)
If you have a food processor or chopper, pulse 1/2 the cauliflower until smooth and add in garlic and the remaining cauliflower.  If you don't have a chopper or processor, try using a blender or hand mixer.
Add in the remaining ingredients and mix.

Transfer to a oven baking dish and bake for approx. 15-20 min, or until heated through.
